TUNA RICE SALAD
This rice tuna salad is oh-so-satisfying! Packed with all the good stuff your body needs: fiber-rich brown rice, healthy fats from avocado and olives, and a protein boost from the tuna and eggs 🙌🏼 However it's the combination of textures and flavours that really makes this salad shine 😋 The star of the show though, is the simple - but on point- Dijon mustard dressing that ties it all together with its tangy sweet flavor with a pungent kick 🤩
Ingredients
- 300 g tuna brined in water brined in water
- 5 eggs, boiled
- 300 g brown rice, cooked
- 80 g avocados
- 150 g cherry tomatoes
- 50 g carrots
- 100 g sweet corn
- 30 g green olives
- fresh coriander
For the dressing (adjust quantity to your preference):
- 1 tbsp extra virgin olive oil
- 1 tbsp Dijon mustard
- 1 tsp honey or maple syrup
- 2 lemon
- salt
