Ingredients
- 8 sheets spring roll pastry
- 113 g tuna brined in water (1 can)
- 100 g potatoes cooked
- 4 triangle light cow cheese
- 30 g green olives
- cumin powder to taste
- fresh coriander

Instructions
- In a mixing bowl, smash with a fork the tuna, cow cheese, diced potato and olives. Season with cumin, and salt to taste.
- Squeeze half a lemon and add chopped coriander.
- Cut the spring rolls pastry in half and place one half on top of the other to form a strip.
- Place some of the filling on one side. Fold the brik over several times to form a triangular shape.
- Give a spray of olive oil on each side and airfry 15min at 200C. Flip half way for both sides to be golden brown.
- Serve with a simple green salad topped seasoned with lemon juice, salt and pepper.
Notes
Alternatively if you don't have an air fryer, you can pan fry the bricks with a spray of oil on each sides.
