Ingredients

  • 90 g crustless wheat sandwich bread (3 slices)
  • 1 eggs
  • 50 ml semi-skimmed milk
  • 1 tsp monk fruit sweetener I use monkfruit sweetener
  • 1 tsp vanilla extract
  • 25 g powdered peanut butter (I use PB2)
  • 50 g homemade chia seed jam
  • 3 g butter
  • 10 g condensed milk

Instructions

  • Mix the powdered peanut butter with a bit of water (approx 5 tsp) until a thick and smooth consistency.
  • Spread the PB and homemade jam onto 2 slices of bread and stack them together with the plain slice on top.
  •  In a bowl, whisk the egg with milk, vanilla extract , sugar free sweetener.
  • Cut the sandwich in 4 equal squares and soak them in the egg mixture until everything is absorbed.
  • Put a bit of butter in a hot pan, and toast the PBJ cubes on each sides until golden.
  •  Drizzle with the condensed milk and indulge 🤤

Notes

To increase your protein intake you can add 20g of vanilla protein powder in the milk. (do it before whisking the egg to avoid clumps)
