Ingredients

  • 3 pieces weetabix or 60g oats
  • 50 g dried pitted dates
  • 20 g almonds
  • 250 g cottage cheese, low fat
  • 150 g greek yogurt, fat free
  • 1 eggs
  • 30 g vanilla protein powder
  • 100 g strawberries
  • 50 g blueberries
  • 1/2 lemon

Instructions

  • Soak the dates in warm water for 10min to soften them.
  • Blend the weetabix, dates, and almonds in a food processor until it becomes a moist crumble.
  • Pour the mixture on a parchment paper, and press it down to form the base of the cheesecake.
  • Blend the cottage cheese, greek yogurt , protein powder, egg, sweetener and lemon juice until smooth. Pour the mixture onto the weetabix base.
  • Bake in the oven at 180C degree for 45min or until the cheesecake becomes firm-ish.
  • Put in the fridge overnight or for at least three hours to set.
  • Top with the fresh berries before serving and enjoy!
