HIGH PROTEIN AND LOW CALORIE LEMON LOAF
The macros of this cake are insane and cake was super yummy and moist!
Ingredients
- 2 eggs
- 70 g self raising flour
- 20 g coconut flour
- 200 g cottage cheese, low fat
- 50 g vanilla protein powder
- 3 lemon juice
- 20 g monk fruit sweetener I used calorie free maple syrup in the video
- 1 tbsp vanilla extract
- 1/2 tsp baking soda
- 1 tsp baking powder
For the frosting:
- 40 g light cream cheese
- 40 g greek yogurt, fat free
- 20 g vanilla protein powder
- lemon juice to taste
Instructions
- Blend cottage cheese, lemon juice, vanilla extract and the sweetener in a mixer to get a smooth consistency.If you don’t have calorie free sweetener you can use regular one.
- Mix the dry ingredients (flour, coconut flour, whey protein powder* and lemon zest), add the eggs and pour the blended mixture you prepared before, and mix everything.
- Bake in the oven for 40min at 160C.
- Prepare the frosting in the meantime by mixing the greek yogurt with light cream cheese ,protein powder and lemon juice.If you don’t have vanilla protein powder, you can add some sweetener and vanilla extract.
- When the cake is done, set it aside for 30min so that it cools down then pour the frosting.
- Sprinkle some lemon zest on top and INDULGE , or if you can wait, put it in the fridge for 20min for the frosting to set .
