Ingredients
- 300 g pork tenderloin
- 60 g onion
- 60 g dried apricots
- 20 g honey
- 20 g green olives
- 10 g almond flakes
- green onions
- 1 tsp extra virgin olive oil
For the pork marinade:
- 1 tbsp cumin powder
- 1 tbsp ras el hanout
- 1 tsp turmeric
- 1 tsp cinnamon powder
- 1 tsp cayenne pepper
- 1 tsp ginger powder
- 1 tbsp garlic
- 1 tbsp onion powder
- salt to taste

Instructions
- Marinate the pork tenderloin cut in dices with all the spices.
- Soak the dried apricots in warm water to soften them.
- Sauté the sliced onion with a spray of olive oil and the marinated pork until golden.
- Deglaze with the water in which you have soaked the dried apricots, add the honey, apricots and olives into the pan.
- Cover and cook for 10min or until the sauce get thicker and nicely glaze the meat.
- Top with fresh coriander and green onions. Sprinkle some roasted almond flakes before serving .

I served the dish with brown rice and airfried brussel sprouts 😋
