Ingredients
- 400 g durian
- 150 ml milk, low fat
- 150 ml coconut milk
- 240 g glutinous rice, cooked or 150g uncooked
- 1 pinch salt
- 1 scoop vanilla protein powder
- 1 tbsp sesame seeds

Instructions
- Wash vigorously the glutinous rice in a bowl of cold water until water runs clear. Soak the glutinous rice for 4 hours or overnight.
- Drain the rice well and steam it for 20min using a steamer rack and cloth. I arranged the rice around a small ramekin then removed the ramekin. This creates a hole in the middle so that the steam can pass through and cook the rice evenly.
- Combine the coconut milk, milk, salt in a small pot and bring it to a boil. Turn off the heat then add chunks of durian meat and let it sit and infuse for another 20 min.
- Let the durian milk cool down before adding protein powder. If it’s steaming hot, the protein will cook and create lumps.
- Top with sesame seeds before serving.
Notes
The rice will last in the fridge for a couple of days, but be sure to seal it tightly as it dries out quickly. To reheat, steam or microwave it by covering it with a damp towel so it doesn’t dry out. I will then just add the cold durian milk on top of the rice but you can warm it up if you prefer.
Macros includes protein powder but it is optional, you might add some sweetener if you skip it.
