Ingredients
- 340 g ripe bananas mashed
- 70 g oat flour
- 30 g low fat peanut butter powder I used PB2
- 2 eggs
- 30 g vanilla protein powder
- monk fruit sweetener I used 10g stevia but some people might like it sweeter
- 1/2 tbsp baking soda
- 1 pinch salt
FOR THE ICING:
- 100 g cottage cheese, low fat
- 10 g cocoa powder, unsweetened
- 30 g chocolate protein powder
- 5 g stevia
FOR THE TOPPING:
- 25 g walnuts

Instructions
- Smash the bananas with a fork and cut some slices to top on the batter in the end.
- Add in the egg, mix well.
- Add in all the dry ingredients, mix until combined then pour the batter in a cake pan.
- Add the banana slices evenly on top of the batter.
- Bake in a preheated oven for 40min at 150C (or until you can dig a toothpick and it comes out clean ) .
- In the meantime you can prepare the icing by blending the ingredients in a food processor until a smooth consistency. You might add a little bit of milk to help if it's too thick. Keep the icing in the fridge.
- When the cake is cooked, let it cool down for a bit before adding the icing and top with crushed walnuts.
Notes
Add the crushed walnut just before serving to keep them crunchy.
