Ingredients
 

  • 400 g ground beef, lean
  • 240 g kidney beans 1 can
  • 1 onion diced
  • 1 tbsp tomato paste
  • 1 can whole peeled plum tomatoes
  • 1 bay leaves
  • 1 tsp chili powder to taste
  • 1 spray extra virgin olive oil
  • 2 avocados (160g)
  • 500 g brown rice, cooked
  • fresh coriander
  • 2 lime juice

Instructions

  • Cook in a pot diced the onion with a spray of oil until translucent.
  • Add in the ground beef with all the seasoning and cook until golden brown.
  • Then add the canned kidney beans that you have drained and rinsed, the tomato sauce and 1-2 bay leaves.
  • Cover the pot with a lid, and simmer for at least 30min.
  • Assemble each portion with the cooked rice , chili con carne, and half an avocado.
  • Top with fresh coriander and a drizzle of lime.

Notes

This recipe can be customized to your liking. You can add extra toppings like shredded cheese, diced tomatoes, or sliced jalapeños.
