Ingredients
- 70 g tapioca pearl
- 160 g ripe bananas
- 130 g sweet corn
- 30 g rock sugar or other sweetener
- 50 g coconut milk
- 1 tbsp sesame seeds
- 1 pinch salt

Instructions
- Soak the tapioca pearls in warm water until they become soft (15-20min),then drain.
- Bring 600mL of water to a boil and add the remaining ingredients (soaked tapioca pearls, bananas cut in chunks, sugar , corn, coconut milk and salt).
- Turn the heat to medium and let it simmer for 15-20min or more, depending your desired consistency of the bananas.
- Sprinkle a bit of sesame seeds before serving.
Notes
*I like to add one scoop of vanilla protein powder to have a high protein dessert and hit my protein goals.
IMPORTANT: If you add protein powder, do it when the pudding has cooled down, otherwise heat will cook the protein powder, it won’t dissolve properly and I will form nasty lumps.
*You can put more coconut milk for more richness and but macros will change.
