Ingredients
- 400 g ground beef, lean
- 240 g kidney beans 1 can
- 1 onion diced
- 1 tbsp tomato paste
- 1 can whole peeled plum tomatoes
- 1 bay leaves
- 1 tsp chili powder to taste
- 1 spray extra virgin olive oil
- 2 avocados (160g)
- 500 g brown rice, cooked
- fresh coriander
- 2 lime juice

Instructions
- Cook in a pot diced the onion with a spray of oil until translucent.
- Add in the ground beef with all the seasoning and cook until golden brown.
- Then add the canned kidney beans that you have drained and rinsed, the tomato sauce and 1-2 bay leaves.
- Cover the pot with a lid, and simmer for at least 30min.
- Assemble each portion with the cooked rice , chili con carne, and half an avocado.
- Top with fresh coriander and a drizzle of lime.
Notes
This recipe can be customized to your liking. You can add extra toppings like shredded cheese, diced tomatoes, or sliced jalapeños.
