Ingredients
 

  • 40 g kale
  • 100 g edamame
  • 100 g black chickpeas, cooked
  • 60 g cherry tomatoes
  • 60 g Oregon sugar pod peas
  • 2 eggs hard boiled
  • 20 g feta cheese, low fat
  • 40 g red onion
  • fresh coriander

For the dressing

  • lemon juice to taste
  • sumac
  • salt and pepper
  • paprika

Instructions

  • Soak the raw chickpeas overnight then cook them through in boiling water.
  • Hard boil the eggs and blanch the oregano sugar pod peas.
  • Add all the ingredients in a big mixing bowl.
  • Prepare your dressing by mixing lemon juice and your favorite spices.
  • Pour the dressing on the salad and enjoy!
