Ingredients
- 40 g kale
- 100 g edamame
- 100 g black chickpeas, cooked
- 60 g cherry tomatoes
- 60 g Oregon sugar pod peas
- 2 eggs hard boiled
- 20 g feta cheese, low fat
- 40 g red onion
- fresh coriander
For the dressing
- lemon juice to taste
- sumac
- salt and pepper
- paprika

Instructions
- Soak the raw chickpeas overnight then cook them through in boiling water.
- Hard boil the eggs and blanch the oregano sugar pod peas.
- Add all the ingredients in a big mixing bowl.
- Prepare your dressing by mixing lemon juice and your favorite spices.
- Pour the dressing on the salad and enjoy!
