Ingredients

  • 240 g plant-based pork I used 1 pack of Omnipork
  • 1 tbsp oyster sauce
  • 1 tsp fish sauce
  • 1 tsp dark soy sauce
  • 1 tsp light soy sauce
  • 1 Thai chili to taste (optional)
  • 3 cloves garlic minced
  • 2 shallots or red onion
  • 1 red chili
  • 50 g baby corn I put baby corn but red bell pepper or green beans work great!
  • 1 fresh Thai basil
  • 1 lime juice
  • 1 spray extra virgin olive oil

Instructions

  • Stir fry with a spray of oil all the ingredients above starting with shallots and garlic until fragrant.
  • Add in the plant based meat with all the condiments and stir fry until golden.
  • Add the veggies and a bit of water if it’s too dry. Cook for few min until they are cooked through.
  • Add the basil leaves at the very end and don’t forget the lime juice, it adds the perfect fresh and tangy flavour!

Notes

*The dish is traditionally served with rice with an optional sunny side egg on top.
*You can also go low carb and have it with lettuce wraps 🥬 . 
*You can cook it the traditional way with minced pork, chicken or beef too.
