COWBOY CAVIAR

The black beans make this salad high protein and perfect for meal prep as it doesn’t get soggy like it does with leafy greens. You can add other type of beans as well but I only had black ones.

Ingredients
 
 

  • 500 g black beans, cooked
  • 250 g sweet corn
  • 250 g tomatoes
  • 50 g red onion
  • 20 g jalapeños
  • 160 g avocados
  • lemon
  • cumin powder to taste
  • fresh coriander

Instructions
 

  • Soak the beans overnight then boil them in salted water until cooked through.
  • Dice the tomatoes , red onion, jalapeños and avocado.
  • Add the diced veggies to the beans with chopped coriander.
  •  Season with salt , lemon/lime and I like to add cumin as well.
  • Serve with your favorite protein or with tortilla chips as a salsa.
