Ingredients
 
 

  • 500 g black beans, cooked
  • 250 g sweet corn
  • 250 g tomatoes
  • 50 g red onion
  • 20 g jalapeños
  • 160 g avocados
  • lemon
  • cumin powder to taste
  • fresh coriander

Instructions

  • Soak the beans overnight then boil them in salted water until cooked through.
  • Dice the tomatoes , red onion, jalapeños and avocado.
  • Add the diced veggies to the beans with chopped coriander.
  •  Season with salt , lemon/lime and I like to add cumin as well.
  • Serve with your favorite protein or with tortilla chips as a salsa.
