Ingredients
 

  • 290 g watermelon
  • 1 Persian cucumber
  • 70 g cherry tomatoes
  • 200 g cottage cheese, low fat
  • 50 g feta cheese, low fat
  • 40 g red onion
  • 1 fresh mint
  • 1 aragula

Topping:

  • lemon juice
  • sumac
  • balsamic cream

Notes

 The balsamic glaze is a concentrated version of balsamic vinegar with a sweeter and more complex flavour profile. I don’t recommend to substitute with anything else but if you don’t have any, you can make your own with simple balsamic vinegar.
Just boil 2 cups (or more) balsamic vinegar until it reduces and becomes a thick and syrupy sauce. You can add a bit of maple syrup as well, then store in a glass container.
