Ingredients
- 210 g salmon fillet
- 100 g edamame
- 200 g cherry tomatoes
- 100 g brown rice, cooked or quinoa
- 150 g mango
- kale or any leafy greens
For the salmon marinade
- 1 tsp onion powder
- 1 tsp garlic
- 1 tsp ginger powder
- 1 tsp paprika
- 1/2 tsp chili flakes
- 1 tsp honey
- 1 lemon
For the dressing
- 1 tbsp light mayo
- 2 tbsp sriracha
- lemon juice to taste
- sesame seeds optional

Instructions
- Prepare the marinade by mixing all the ingredients in a bowl.
- Cut the salmon fillet in cubes and toss in the marinade to coat.
- Bake in the airfryer at 180C for 10min.
- In the meantime, prepare your salad bowl with the cooked rice,diced mango, edamame and kale. Add the salmon when it is cooked.
- Prepare the dressing by mixing light mayo, sriracha lemon and salt. Drizzle over the salad.
- Garnish with sesame seeds , maybe more lemon and enjoy!
