Ingredients

  • 210 g salmon fillet
  • 100 g edamame
  • 200 g cherry tomatoes
  • 100 g brown rice, cooked or quinoa
  • 150 g mango
  • kale or any leafy greens

For the salmon marinade

  • 1 tsp onion powder
  • 1 tsp garlic
  • 1 tsp ginger powder
  • 1 tsp paprika
  • 1/2 tsp chili flakes
  • 1 tsp honey
  • 1 lemon

For the dressing

  • 1 tbsp light mayo
  • 2 tbsp sriracha
  • lemon juice to taste
  • sesame seeds optional

Instructions

  • Prepare the marinade by mixing all the ingredients in a bowl.
  • Cut the salmon fillet in cubes and toss in the marinade to coat.
  • Bake in the airfryer at 180C for 10min.
  • In the meantime, prepare your salad bowl with the cooked rice,diced mango, edamame and kale. Add the salmon when it is cooked.
  • Prepare the dressing by mixing light mayo, sriracha lemon and salt. Drizzle over the salad.
  • Garnish with sesame seeds , maybe more lemon and enjoy!
