Ingredients
- 3 Chinese pears
- 1 piece snow fungus
- 3 tbsp goji berries
- 20 pieces jujube dates
- 100 g lotus seeds
- 50 g rock sugar

Instructions
- Rinse the lotus seeds and snow fungus, then soak them in water overnight or for at least 2 hours until they are soft.
- In a pot, add water, the pealed pears cut in big chunks, snow fungus sliced, jujube dates cut in halves, lotus seeds, and rock sugar or honey to your taste.
- Bring to a boil, reduce the heat and let it simmer for about 1 hour. Add the goji berries 10min before the end. The soup should be slightly syrupy.
- Serve warm or chilled.
Notes
It can be refreshing when consumed chilled on a summer or warming when consumed hot on a cold winter. I personally prefer to have it cold from the fridge. It’s honestly not something I will particularly crave but it is something I do enjoy having and can indulge guilt-free while reaping the benefits of these amazing ingredients!
