Ingredients

  • 350 g chicken breast
  • 400 g konjac noodles
  • 270 g cucumber 
  •  1 tbsp chili crisp oil (optional)
  • 2 slices  fresh ginger
  • 1 stalk green onions
  • 1 tsp sesame seeds

For the dressing:

  • 45 g powdered peanut butter (I use PB2)
  • 1 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp sesame paste
  • 1 tbsp rice vinegar
  • 1 cloves garlic crushed
  • 1 slice fresh ginger finely chopped

Instructions

  • Cook the chicken for 12min in boiling water with salt and some aromatics such as 2-3 slices of ginger and the white part of spring onion.
  • Shred the chicken with a fork and cut the cucumber in thin slices.
  • Prepare the dressing by mixing all the ingredients listed above and add water until desired consistency.
  • Mix the chicken , cucumber and dressing until well combined.
  • Rinse the noodles and serve with the mixture of chicken and cucumber. Top with sesame seeds and chili oil to taste.
