Ingredients
- 400 g pomelo (flesh of 1 whole pomelo)
- 120 g shrimps cooked
- 10 g coconut flakes, unsweetened
- 3 shallots thinly sliced
- 20 g peanuts, roasted
- 1 handful fresh coriander
- lettuce
For the dressing:
- 10 g fish sauce
- 10 g palm sugar (or coconut sugar)
- 1 or 2 lime juice to taste
- Thai chili to taste

Instructions
- Peel the pomelo and remove all the flesh of it.
- Cook the shrimps with a pray of oil on a pan for few minutes. Season with salt and pepper .
- Prepare the dressing by mixing all the ingredients together.
- Toss pomelo, shrimps ,shallots, chopped fresh herbs, and sauce together and add the toppings (peanuts, coconut flakes)
Notes
If you can’t find pomelo, grapefruit can be a nice substitute.
For the dressing, you can make a big batch and store in the fridge. The quantity are for reference, you might like it more sour/salty/sweet/spicy, so you wanna adjust it according to your preferences and the sweetness of the pomelo.
