Ingredients
 

Ingredients for the salad:

  • 50 g kale or any leafy greens
  • 150 g shrimps  or your choice of protein
  • 80 g mango
  • 50 g purple cabbage
  • 4 cherry tomatoes
  • 4 white radish
  • 60 g avocados
  • 20 g pickled red onion
  • fresh mint

For the dressing :

  • 25 g low fat peanut butter powder I use PB2
  • 2 tsp light soy sauce
  • 2 tsp lime juice or white vinegar
  • 1 tsp monk fruit sweetener or maple syrup
  • 1 tsp sesame seeds
  • 1 Thai chili optional

Instructions

  • Pan fry the shrimps with garlic powder, salt and pepper for few min and add them to your salad bowl with all the chopped ingredients.
  • Mix all the ingredients for the dressing in a bowl and slowly add water until desired consistency.
  • Drizzle the high protein peanut dressing onto the salad and enjoy!

Notes

I didn’t have any but I usually like to add edamame for extra protein !
