Ingredients
 

  • 300 g ground beef, lean 10%fat
  • 100 g onion
  • 4 cloves garlic
  • 1 handful fresh mint or parsley,coriander
  • 2 tbsp zaatar or your favorite spices
  • 8 low carb taco tortillas mine are from Mr Tortilla
  • 40 g feta cheese, low fat crumbled
  • 1 Persian cucumber diced
  • 4 cherry tomatoes diced

For the pickled onion:

  • 1 red onion
  • apple cider vinegar or white vinegar
  • salt and sumac to taste

For garlic sauce:

  • 25 g greek yogurt, fat free
  • 1 garlic crushed
  • salt

Instructions

  • Blend the onion, garlic and fresh herbs in a food processor
  • Add the pulp to the ground beef with spices and salt, then mix well together.
  • Ideally let it marinade in the fridge for few hours or overnight.
  • Form 8 meatballs and put each meatball onto a taco tortilla. Put a parchment paper on top and apply some weight on it to make it flat (use a bottle or rolling pin).
  • Pan fry the taco in medium high heat, meat facing down for couple of minutes, pressing down with a spatula.
  • Flip the tacos and cook for a minute tortilla side down.
  • In the meantime, prepare the garlic sauce by mixing greek yogurt, crushed garlic and salt.
  • Top the tacos with garlic sauce, diced tomatoes ,cucumber, pickled red onion, and feta cheese.
