Ingredients
 

  • 400 g beef
  • 250 g carrots (1 carrot)
  • 450 g spinach
  • 4 eggs
  • 130 g red bell pepper (1 red bell pepper)
  • 200 g shiitake mushrooms
  • 150 g onion (1 onion)
  • 150 g sweet potato glass noodle dry

Beef marinade

  • 1 tbsp soy sauce
  • 1/2 tbsp sugar
  • 1 tsp sesame oil
  • 1/2 tbsp mirin

Sauce

  • 2 tbsp soy sauce
  • 1 tbsp mirin
  • 1/2 tbsp sugar
  • 1 tsp sesame oil
  • 1 tbsp gochuchang optional

Instructions

  • Soak the glass noodles in a bowl of water to reduce cooking time.
  • Marinate the beef with the soy sauce, mirin, sugar, minced garlic and sesame oil. Set aside.
  • Cut the carrot, red bell pepper, mushrooms and onion into thin strips.
  • Beat 4 eggs together. Season with salt and pepper.
  • Cook the eggs like a thin omelette. Then slice it into thin strips.
  • Stir fry the beef few minutes until cooked through.
  • Season and stir fry each veggie separately.
  • Blanch the spinach 10 sec in boiling water then soak in iced water to stop the cooking process. Then when cooled down, drain the excess of water as much as you can .
  • In the same boiling water, cook the glass noodles for a minute. It does not take long because you have soaked the glass noodles before.
  • Prepare the sauce by mixing soy sauce, sesame oil and optionnaly gochujarang or chili flakes if you like it spicy.
  • Drain the glass noodles and put it in a big mixing bowl with 3/4 of the sauce mixture.
  • Add in the beef, veggies, omelette and the rest of the sauce. Mix well together.
  • Top with sesame seeds before serving and enjoy!
